Do you love grilling out? I do!!
Okay… I love when my husband grills out. I’m not so good at it.
“We” grilled out a few days ago, and my hubby wanted some grilled potatoes, AND he wanted me to figure out how to do it!
Did he forget all the round little pieces of black coal that are supposed to represent hamburgers that appear whenever I grill???
Well, I found the idea for this recipe on allrecipes.com. The original recipe called for brown sugar, and I’m pretty sure I am going to try it out, but this time I wanted savory over sweet. (Your shocked, I know! :D)
Let me just say, these potatoes are really easy to make.
Grilled Potatoes with Bacon
4 baking potatoes, scrubbed
1 1/4 teaspoons salt
12 slices bacon
2 tablespoons freshly ground black pepper
Preheat an outdoor grill for medium-high heat.
Make several cuts into each potato without going all of the way through. Place potatoes onto squares of aluminum foil. Sprinkle 1/4 teaspoon of salt inside each potato, then wrap with 3 slices of bacon and secure with toothpicks if needed. Brush the potatoes with dressing, then sprinkle black pepper. Wrap the potatoes loosely in the aluminum foil.
Grill potatoes until the bacon has crisped, and the potato is soft in the center, about 45 minutes depending on grill temperature.
