This Pampered Chef recipe is so good! We had it for dinner one night this week. It’s just perfect for a hot summer night! And, it’s super easy to make!!
Deluxe Cheeseburger Salad
4 sesame seed hamburger bun tops (or croutons if desired)
1 lb lean ground beef
1 small onion divided
½ cup dill pickles, finely diced
¾ cup ketchup
1 tbsp yellow mustard (prepared)
8 cups thinly sliced romaine lettuce
2 plum tomatoes, sliced (optional)
1 cup shredded cheddar cheese
Preheat oven to 425°F (220°C). Slice bun tops into 1/4-in. (6-mm) strips. (If bun tops are very thick, slice bottoms off horizontally before slicing into strips). Arrange in a single layer on cookie sheet; bake 8–10 minutes or until lightly toasted. Cool completely. (You can just use croutons if you don’t want to go through the trouble of making these, which is what I did! )
Cut onion in half crosswise. Slice half of the onion crosswise into thin rings. Set aside.
Brown hamburger, until it is no longer pink.
Chop remaining onion half.
Combine chopped onion, diced pickles, ketchup and mustard. Add to cooked beef; mix well.
To serve, arrange lettuce on large serving platter. Spoon beef mixture over lettuce. Top with cheese, tomatoes and sliced onion. Arrange hamburger bun croutons around edge of platter. Serve immediately.

Tastes just like a cheeseburger! So good!
This salad was also very filling. My belly loved that!
My husband used the leftover meat mixture to make a sloppy joe…
A cheeseburger sloppy joe that is!
