Cornbread Salad {The meal!}

This weekend we had front row seats at the Dayton Air Show, here in Ohio. It was really fun. The Blue Angels were the star attraction, and they didn’t disappoint!

They were so amazing to watch.

The trick was to try to capture their picture as they flew by. My camera is slow, so this is what most of my pics looked like…

We had a blast anyway! I want to thank my brother-in-law, Rick, for getting us passes. (He’s so cool that way! :D)

Anyhoo…

I found this recipe for cornbread salad from The Shady Porch.  I thought it sounded de-lish!

Let me just say…

It was out of this world!

 

You must try this salad…

So good!

I wanted this to be a main dish, so I added some chicken. (If you want more of a side dish, you can omit the chicken.)

Cornbread Salad

2 packages cornbread mix (prepared as directed on box, and baked in a 9×13. Add 2 eggs and 2/3 cup milk)
2 -16 oz. cans of pinto beans, drained
1 pkg. Ranch Dressing mix
1 cup of mayonnaise
1 cup of sour cream
1 bag frozen whole kernel corn, thawed (or 1 can, drained)
3-4 green onions, cleaned & chopped
1-2 tomatoes, diced (or 1 can)
1 green bell pepper, diced
1 lb bacon, fried and crumbled
3 chicken breast, cooked and seasoned (I cooked mine in the crock pot with salsa and a couple sprinkles of ranch dressing mix on high for 2-3 hrs until done.)
1 – 16oz bag of shredded cheddar cheese or a blend

Directions – Prepare cornbread as directed on box.

In a medium bowl combine Ranch dressing mix, sour cream and mayonnaise. Set aside.  In another bowl, mix corn, onions, tomatoes, and bell pepper. Set aside.

Crumble 1/2 of the cornbread into bottom of a large serving dish.

Add one can of pinto beans, spread evenly over cornbread layer.

Add layer of mixed vegetables using 1/2 of mixture – corn, tomatoes, etc.

Sprinkle 1/2 of the crumbled bacon and 1/2 of the cheese to form the next layer.

Sprinkle with 1/2 the cooked chicken

Add 1/2 of the dressing.

Repeat layers as above, then cover and refrigerate for 2-3 hours.

This makes A LOT so I put it in a glass lasagna pan which is slightly larger than a 9×13. Since this is a layered dish it would also look stunning in a glass truffle bowl.

It’s even better the next day, as the flavors have time to mingle and infuse into each other.

This was a huge hit with the fam. For sure!
