Reese’s Peanut Butter Cup Cheesecake

Last week was my b-day, and this was my little birthday gift to myself!

Reese’s Peanut Butter Cup Cheesecake

In defense of my hubby, he did offer to go buy me a cake for my birthday, but you can’t buy happiness, I tell ya!

This cake is pure happiness!!

Reese’s Peanut Butter Cup Cheesecake

From: Lady With the Red Rocker

Crust:
2 cups Oreo cookies, crushed (about ½ package)
½ stick butter, melted
1 Tbsp granulated sugar

Filling:
4 – 8oz cream cheese, softened
1 cup granulated sugar
1 tsp vanilla
4 eggs
2 Tbsp creamy peanut butter
1 cup dark chocolate chips
45 miniature Reese’s peanut butter cups, separated

Preheat oven to 325°.

For crust: Combine cookie crumbs, butter and sugar in bowl. Press into bottom of a 10 inch spring-form pan. Bake for 5 minutes. Set aside.

For filling: In a large mixing bowl or stand up mixer, beat cream cheese and sugar until smooth. Mix in vanilla.

Beat in eggs one at a time, scraping the sides of bowl after each egg. Stir until just mix.

In a microwave safe bowl heat chocolate chips on 50% power at 30 second intervals, until melted. Allow to cool slightly.

Slowly, stir melted chocolate into cheesecake batter. Add peanut butter to batter and mix well.

Chop 30 Reese cups and stir into batter.

Pour batter into prepared crust.

Chop remaining Reese cups and sprinkle on top of cheesecake.

Bake for 55 minutes, or until set. (To prevent butter from dripping into oven, bake cheesecake on a cookie sheet.)

When cheesecake is done, turn off oven and crack oven door. Allow cheesecake to cool inside oven.

Refrigerate for 4 to 6 hours, or overnight before removing ring or cutting. Refrigerate leftovers. Enjoy!
