{No Flour Added} Banana Oat Muffins

We had Vacation Bible School every morning last week. We all had a blast. The kids wanted to have VBS again this week, but I’m pretty sure the adults are all good ’till next year. ;)

We are not exactly morning people at our house. I really need to get on the ball on this, ’cause school starts in a couple of weeks! Yikes!!! :o (I’m not READY yet!!)

Anyhoo…

I did not want to be “that mom” who fed her kids Pop Tarts in the car on the way to Bible School. So, I needed something that was quick and ready to eat. (Okay, maybe I was “that mom” one day last week…Ahem – *wink*wink*)

I found this recipe on Pinterest and I thought it was perfect for a nice, quick, and healthy breakfast.

No Flour Added – Banana Oat Muffins

The pin came from Keeping Up with the Joneses.

I changed up the way to prepare the muffins, a little. They turned out great!

{No Flour Added} Banana Oat Muffins

2  1/2 cup oats (quick cooking)
1 single serving cup of vanilla yogurt (or about 1 cup)
2 eggs
3/4 cup granulated sugar or 2 Tbs Stevia sweetener
1 1/2 tsp baking powder
1/2 tsp baking soda
2 bananas
Nuts to sprinkle on tops of muffins (optional)

*Note: These muffins tend to stick to paper liners. I just sprayed the inside of the  liners with cooking spray before I filled them. They came out of the paper beautifully. Just FYI! :D 


Preheat oven to 400 degrees. Place *paper liners in a 12 muffin, muffin pan. Spray liners with cooking spray.

Place *all of the ingredients, including bananas in a bowl and blend with a pastry cutter until bananas are smashed and the batter is smooth. *(You can add nuts to the batter, or save and sprinkle on top.)

Divide batter among cupcake liners. Sprinkle with nuts, if desired, and bake for 20-25 minutes, or until toothpick comes out clean. Enjoy!!!

This is basically banana oatmeal baked in muffin cups.

So good and very filling!!!

My kids loved ‘em, and they didn’t even know they were good for them. Shhhh, don’t tell.  ;)
