Copy Cat IHOP Pancakes! Oh yeah!!!

Okay, my kids are always asking me to make them pancakes. I have to say, they are not my favorite thing to make, because while everyone else is done eating, I’m usually standing over the griddle still making pancakes!

Hence the Magic Puffin recipe (pancake muffins).

Well sometimes muffins will not please the subjects of the land, and pancakes are a must.

I usually just make Bisquick pancakes because they are easy and I always have Bisquick on hand. Well not today my friends!

I found this lovely recipe on Pinterest. It came from Cookin’ Up North.

Copy Cat IHOP Pancakes Oh yeah!

Let’s just say I found my new “go to” pancake recipe.

Copy Cat IHOP pancakes

1 ¼ c. flour
1 tsp. baking powder
1 tsp. Baking soda
pinch of salt
1 egg, beaten
1 ¼ c. *buttermilk (see notes)
2 Tbsp. melted butter
¼ c. sugar

Stir together the flour, baking soda, baking powder,and salt. Mix the egg with the buttermilk and add to the flour mixture, stirring only until smooth. Add the melted butter and sugar. Fry on a greased griddle. Makes about ten 4 inch pancakes.

*Notes: I did not have buttermilk, so I used a tip from Paula Deen. Just add 1 tsp of white vinegar to 1 cup of milk. Allow the milk to sour for 5 minutes. This recipe calls for 1 and ¼ cup of milk so I used 1 and ¼ teaspoon vinegar.

  1. sounds yummy! Travis makes pancakes a lot and freezes them – then we can just pop them in the toaster for a quick delicious breakfast. He likes the ‘Grainberry’ brand of pancake mix. We will have to try this one and see if we like it better! and that tip for buttermilk is the best – I’ve been using that for years, my Mother taught me that when I was a teenager!

      I doubled this batch so we can have leftovers. The kids always eat them so fast that I never have any to freeze. I will have to sneak some in the freezer before they know it! :D I love the buttermilk trick too. We don’t like it, so I never buy it. :D
