Cookie Butter Pretzel Granola Bars

My friend introduced me to a little something called cookie butter. Maybe you’ve heard of it…

It’s like peanut butter, but instead of peanuts, it’s made with COOKIES!

Yeah, I died when I heard about cookie butter. So. Stinking. Good.

Anyway, a couple of weeks ago I made some No Bake Granola Bars that are so much better than Quaker Granola Bars, I can’t stand it!

I thought that these granola bars would be perfect with some cookie butter mixed in. And even better, some pretzels would really make these babies YUM!

Boy was I right!!!

Cookie Butter Pretzel Granola Bars

4 cups quick cooking oats {not rolled oats!}
3 cups crushed pretzels
1 stick butter
½ cup honey
2/3 cup packed brown sugar
½ cup cookie butter
1 teaspoon vanilla

In a large bowl, stir oats and crushed pretzels together. Set aside. In a small pot, melt butter, honey, and brown sugar together over medium high heat until it comes to a bubble. Reduce the heat and cook 2 minutes. Pour in vanilla and cookie butter and stir until cookie butter has melted. Pour over dry ingredients and mix well to moisten all ingredients. Pour into 9×13 jelly roll pan, lined with foil and lightly greased. Firmly press the mixture into the bottom of the pan. Cool on a counter top to room temperature for two hours before cutting into bars. Wrap in parchment or plastic wrap and store at room temperature.

Notes: If the bars seem like they are not holding together when it is time to cut them, place them in the frig for a few minutes until they firm up a little. Do not leave the bars in the frig because they will become too hard to cut. The key to the bars sticking together is to make sure they have been pressed down hard enough. Spray the backs of spoons with cooking spray to help press bars into pan.

  1. Yup – that cookie butter is EVIL I tell ya…EVIL! I got my first couple of jars at Trader Joe’s and then discovered that WalMart has the Biscoff…too close..too convenient…too good! And now you had to do a recipe with it – I suppose you will be making me some of these? :)

    • Woops! You don’t add the rice cereal. It’s just the granola and pretzels. I copied the recipe from the Chocolate Covered Granola Bars that I made a couple of weeks ago and I forgot to take the rice cereal part out of the directions. Thanks for pointing it out so I can fix!! :D

    I am working on my bird wooden art this week but I can take a break and make these I think !

  3. I made these yesterday and subbed peanut butter for the cookie butter because I didn’t have any and wanted to have them for my boys lunches. They are delish! My hubby said perfect. I don’t think they will last long around here. Now to buy some cookie butter…
