Wooo! Summer is just flying by! I can’t believe that it is almost the Fourth of July!
We are staying super busy with Vacation Bible School, family reunions, cookouts, picnics, and what not. All of these activities have me making more desserts than ever.
For my mom’s family reunion I made these Oreo Cookie Brownie Cupcakes. They are like the ones made with the Reese’s Peanut Butter Cups in the middle, but these are made with Oreos. Yummmm!!!
A friend from church gave me the recipe for these made with Reese’s Cups, and I originally wanted to make these with the Reese’s Cups, but alas, I did not have any Reese’s Cups on hand. I did, however, have some Oreos. They worked perfectly.
Oreo Cookie Brownie Cupcakes
1 pkg. refrigerated chocolate chip cookie dough bars (24 count)
24 Oreo or chocolate sandwich cookies
1 cup milk for dipping cookies
1 (9×13 size) box brownie mix (prepared as directed)
additional ingredients for preparing brownie mix
24 cupcake liners
Preheat oven to 350° F.
Place cupcake liners in two 12 muffin, muffin pans.
Break cookie dough bars apart and press one square into the bottom of each muffin cup.
Dip Oreos in milk to soften and place one Oreo on top of cookie dough in each muffin cup.
Prepare brownie mix as directed. Scoop a spoonful of batter and spread to cover each Oreo and cookie dough in each muffin cup.
Place muffin pans in oven and bake for 20-22 minutes. Store in an airtight container.

I used the double stuffed Oreos. I love all that icing in the middle!
(Yes, those old lady hands belong to one of the traveling gypsies. They are not my own. *ahem*)
These turned out just wonderful. So delish!!! Definitely a new family favorite.
*Just as a little side note. You can pretty much substitute any yummy goodness in the middle of these babies. I made another batch for Bible School and I used the Reese’s Cups in place of the Oreos and they were To. Die. For. I’ve also used chocolate chips. I think next time I will try some miniature candy bars. Oh yeah!!!
No, these are not on Weight Watcher’s, so don’t go eating 3 or 4 at a time, mmkay?
