These are one of my favorite cookie bars. I love ‘em because they are so simple to make and they taste phenom!

The pre-made, store-bought cookie dough is what makes these bars so stinking easy. (I mean, you could make these the hard way and use a homemade cookie dough recipe, but really, who does that?            Martha… yes she does.) :D

I decided to change-up the flavor of cookie dough to give the bars a new twist, and I’m in LOVE!!!

You could try any flavor combo that you like.

I chose double chocolate chip for the bottom “crust” and chocolate-chip peanut-butter-cup dough for the top layer. Y. U. M.

 Chocolate-Chip Cream-Cheese Cookie Bars

2 packages of pre-made cookie dough (any flavor)
2 packages of cream cheese
3/4 cup sugar
1 tsp vanilla
2 eggs

Press 1 package of dough in the bottom of a 13 x 9 pan, and set aside the remaining dough to crumble on top of the filling.

Beat the cream cheese and the sugar together in a medium bowl.  Add vanilla.  Beat in one egg at a time.  Scrape the bowl and beat once more.  Spread filling over the cookie dough in pan.

Crumble the remaining cookie dough on top of the filling.

Bake at 350 degrees for 30 to 40 minutes, until golden brown.  Chill for about 1 hour before cutting. (I like to let mine sit over night before cutting.)

Be sure to make these for a crowd, or you will eat the whole pan yourself. Not that I’ve had any previous experience with this… *ahem* ;)

  1. Are the cream cheese packages 3 oz or 8 oz? And, I presume the cookie dough packages are a “standard” size – not a double recipe or anything special? What is the weight of the two cookie dough packages you use? Thank you!!!
